Simple chemical analysis shows that unadulterated dry shark cartilage powder is approximately 41 percent ash, 39 percent protein, 12 percent carbohydrates, 7 percent water, less than 1 percent fiber, and less than 0.3 percent fat. The ash is 60 percent calcium and phosphorus at a ratio of two parts calcium to one part phosphorus.
